It’s been lovely fall weather here, cold and some rain but also many days of sunshine with chill.

I have been in soup mode. A lot of it has to do with the weather but also just wanting to eat healthier. What’s healthier than blended veggies served hot? Hmmmm

First up……

Potato, Leek and Carrot soup

Very simple to make:
Serves 4

1 Leek
1 medium carrot
5 or 6 small golden potatoes

Cut up your leeks, potatoes and carrots
I covered mine in just enough chicken stock to boil
Once the veggies were soft, I simply spooned batches of it into the food processor
Once all blended, just season to taste ( I used just sea salt)


It’s simple and tasty. The texture is almost creamy because of the potato base. I added just a bit of grated Parmesan on top.

Next Up….

Broccoli and Carrot soup
Serves 4

3 small bunches of broccoli
1 medium size carrot
3 small green onions

Cut all veggies into smaller pieces
Cover with broth (I use chicken stock) just enough to cover top of veggies
Boil until tender
Add spoonful batches into food processor until blended
Season to taste ( I use sea salt, which I have been addicted to since the summer)


I added a dollop of sour cream for a bit of tang and creaminess.


It was a hit with my broccoli loving little ones. They got jello for dessert. You can see how much Littlest loves his food.







Lunch is always a little messy but as long as it’s enjoyed, then it’s worth it.
